茄子煲 荠菜豆腐羹

中午八块头盒饭,实在点勿出来,要了霉干菜烧肉,都是胖肉,让我这喜欢吃胖肉的吃了都有点害怕。

丈母家吃的晚饭,我烧了茄子煲,记得以前谈朋友辰光,我一直烧的,那时没有生抽、老抽,只有酱油,所以烧出来味道再好,还总是黑黑的,今天烧得就不黑。总结经验:油要多,但盛上去之前,要把油泌滗去,否则就象浸在油中一般。还有一点,油焖茄子按理不放水,其实如果茄子太干,可以放一点的。好的茄子色是淡紫色的,极细长,没有籽。茄子要用手扯,一定要扯开,不能有圆的段,就象手不能捏扁鸡蛋一样,只要有完整的段,不易烧瘪掉。

另外烧了荠菜豆腐羹,小吴事先煸好的,但是荠菜少了一点,于是决定着腻,厚薄正好。另外,小吴烧了咸菜墨鱼,墨鱼太薄、太少,另外还有蚝油西兰花香肠,味道很好,但是由于中午烧的,摆到夜倒,色面已经不行了。
