Szechuan Pepper Salt
  1. Put the salt in a pot, with Szechuan pepper together.
  2. Heat and mix, until the salt turn yellow or light brown.

Roasted Nanjing Style Duck Wing Drumettes
  1. Put the duck wing drumette on the salt, press to make the salt stick with the drumette, one by one.
  2. Put all the drumettes into a ziploc, wait 6 hours.

  1. Wash the duck wing tips.
  2. Put duck wing tips to a pot, add water to cover them.
  3. Cook them until boiling.
  4. Wash again, and tear the hair off.
  5. Reboil them from cold water.
  6. Put them into a ziploc, then put Beau Ideal Superior Pickle Sauce into the bag.
  7. Wait at least 4 hours, 6 hours will be the best.
Recipe Notes

Don't over cook the duck wing tips, it's small and soft, just need only few minutes to make it cooked.
